  1. Potato Stuffing Recipe

    This stuffing is used in roasted goose.

    Ingredients

    • Three fourth cup butter
    • Half teaspoon ground sage
    • Two teaspoons salt
    • Six cups boiled potatoes, peeled and diced
    • Half cup chopped parsley
    • One medium onion, chopped
    • Half teaspoon pepper

    Method

    • Crush the potatoes in a mixer or food mill and take them in a bowl.
    • Now, take a frying pan and melt butter in it.
    • After the butter is melted, pour it on the potatoes. Do not pour all of it as you will need a bit for the onions.
    • Mix the butter and potato mixture well and keep it aside.
    • Now, take the butter that is left in the frying pan and sauté the onions till they get golden brown.
    • When you are done with this, add the onions to the potato mixture and add to this sage, parsley, salt and pepper.
    • Mix them well and your potato stuffing is ready.

  2. Roasted Goose with Potato Stuffing Recipe

    Use the above potato stuffing in this roasted goose recipe.

    Ingredients

    • Potato stuffing
    • Pepper
    • Ten to twelve pound goose
    • Salt

    Method

    • Pre heat the oven to 450 degree Fahrenheit.
    • Slice the goose, take off the extra fat, and then give cuts to the goose with the help of a knife so that the extra fat will easily come out and the ingredients will get in and the goose will be more delicious.
    • Apply a mixture of salt and pepper to the goose and then stuff in the potato stuffing and allow it to marinate for an hour or so.
    • Now, place this on a pan and heat it for at least fifteen minutes.
    • Once the skin turns brown, reduce the flame and heat it for another twenty five minutes.
    • While you are heating the goose, make sure to remove the extra fat away which comes off when you heat the goose. This is because goose has a lot of fat in it.
    • When the skin of the goose turns dark golden brown and becomes crispy then turn off the flame and serve it with hot apple sauce.
