Christmas is the special time of the year. People prepare special food on Christmas Eve. In Italy, people celebrate this festival with great enthusiasm. Conventionally, the dinner is meatless and fish dominates in the Italian Christmas dinner recipes.

  1. Venetian Cookie Recipe

    Ingredients

    • 1 cup sugar
    • 4 large eggs, separated
    • 1 1/4 cup margarine or butter, softened
    • 4 1-ounce squares semi-sweet chocolate, melted
    • 1 can(s) almond paste
    • 2 cup all-purpose flour
    • 1 teaspoon almond extract
    • 20 drop red food coloring
    • 1/4 teaspoon salt
    • 1 jar apricot preserves, strained
    • 20 drop green food coloring

    Method

    • Preheat oven to 350 degrees
    • Beat egg whites with ½ cup of sugar. Blend it well.
    • Lessen the speed to medium low and beat in margarine until blended.
    • Beat in egg yolks and almond until well blended.
    • Lessen the speed to low and beat in flour and salt until well combined.
    • Fold egg-white mixture in almond mixture with rubber spatula.
    • Now spread white batter in one jelly-roll pan.
    • Bake layers for 10 to 13 minutes rotating pans through cooking time until layers get set. It is crucial to undercook this batter to make sure moist cookies layers.
    • Let those layers cook in pans for 5 minutes al least. Invert layers on racks to cool perfectly.
    • When all the 3 layers are cooled, you need to remove waxed paper from the layer. Place green layer on serving tray and then spread half of apricot preserves. You need to place white layer on the top side of the green layer.

    • To serve, you need to cut layers lengthwise into four strips. Cut every strip into 10 small rectangles. You should store cookies in tightly covered container in refrigerator.

  2. Baked Stuffed Chicken Recipe

    Ingredients:

    • 1 roasting chicken, with its giblets, boned oil salt
    • 30 g (1 oz) butter
    • 1 tbs rosemary
    • Chicken broth
    • 1 glass white wine

    Filling:

    • 200 g (7 oz) ham
    • 150 g (5 oz) pork loin
    • 100 g (3.5 oz) bacon
    • ½ cup parmesan cheese, grated
    • 150 g (5 oz) beef
    • 1 tbs cooked peas
    • 30 ml (1 fl oz) brandy
    • 1 egg
    • Salt, pepper
    • A pinch of nutmeg

    Preparation:

    • To prepare this Christmas dish, you first need to grind meat together with giblets.
    • Add egg, peas and parmesan, salt, pepper and nutmeg in a bowl.
    • Mix them well. You need to stuff chicken with mixture until it regains its normal shape.
    • After this, you need to preheat oven to 400 degrees.
    • Heat rosemary, oil and butter in a roasting pan.
    • Now, you need to brown the chicken on stovetop.
