- Ingredients:
- 4tbsp butter, softened
- 2 large parsnips, peeled and chopped
- 450g (15oz) carrots, peeled and chopped
- 1 level tsp finely grated orange rind
- 1 level tbsp freshly grated root ginger
- 600ml (1 pint) vegetable stock
- Salt and ground black pepper
- Springs of fresh coriander, to garnish
- 125ml (4fl oz) single cream
- 1 large onion, peeled and chopped
- Method:
- First, you need to melt the butter in a pot over low heat
- Add onion, cook and stir it for 3 minutes
- Add carrots and parsnips. Cover the pot until vegetable get softened
- Stir in orange rind, stock and ginger
- Remove from heat and cool for 10 minutes
- Transfer the soup to a blender and make it smooth.

- Ingredients:
- 2 onions, finely chopped
- 50g (1¾ oz) sultanas
- 35g (1¼ oz) unsalted butter
- 1 red cabbage, shredded
- 2 pinches freshly
- 2 cloves garlic
- 2 Bramley apples, cored
- ¼ tsp ground cinnamon
- Grated nutmeg
- 3tbsp dark muscovado sugar
- ¼ tsp ground cloves
- Salt and black pepper
- Grated zest and juice of 1 orange
- 3tbsp cider vinegar
- Method
:
- First, preheat oven to 150 degrees. Melt butter in a big casserole dish over a low heat
- Cook onions and sultanas for 5 minutes
- Add remaining ingredients except orange zest, apples and cloves
- Now, you need to transfer to the oven and then cook for 1 hour, stir it for half-hour
- Now, you need to stir in the apples and orange zest. Cook it for half-hour
- Now cover it and refrigerate overnight
