The conventional Christmas menu is scalloped potatoes, rolls, green beans, and ham. Another famous Christmas menu is a beef roast, rolls, salad and carrots. You are able to make conventional kind of Christmas menu easily without the meat dish by substituting it with a vegetarian dish. Conventional type of Christmas menu include Portobello mushrooms, nut loaf with mushroom gravy and vegetarian meat loaf. Below are given few vegetarian recipes for Christmas.
1. Roasted Pesto Portobello
- Ingredients:
- 8 large Portobello mushroom caps
- 1 tbs. grated lemon zest
- 2/3 cup pesto
- 2/3 cup breadcrumbs
- ¼ cup hazelnuts, finely chopped
- Salt to taste
- 1 tbs. balsamic vinegar
- 2 tbs. extra virgin olive oil
- 1/3 cup Parmesan cheese
- Preparations:
- Ensure first the top over rack is in place to roast. Preheat your oven to 450 degrees
- Make two baking sheets by lining them with aluminum foil
- Remove stems from mushrooms
- Chop the stems
- Set the mushroom caps
- Combine the pesto, zest, hazelnuts, breadcrumbs and stems in a bowl
- Spoon two rounded tablespoons of topping into every mushroom cap
- Roast mushrooms for 5 minutes
- After removing mushrooms from oven, you need to sprinkle Parmesan cheese on the top of mushrooms
2. Stuffed Artichokes
- Ingredients:
- 2 tbs. butter
- 2 large onions, finely chopped
- 8 artichokes, boiled or steamed and hollowed
- 2 cups walnuts, finely minced
- 3 cloves garlic, crushed
- ½ tsp. Salt
- ½ cup bread crumbs (or wheat germ)
- ½ cup apple juice
- Pepper, to taste
- ¼ tsp. paprika
- ¼ cup fresh parsley, minced
- 2 tbs. fresh lemon juice
- 2 cups cheddar cheese, grated
- Methodology:
- First, you need to preheat oven to 325 degrees
- Cook garlic and onions in butter over medium heat
- Stir in the bread crumbs, pepper and walnuts
- Cook, while stirring over low heat for 6 to 7 minutes
- Add the parsley, thyme, and paprika and apple juice. Boil for at least ten minutes
- Stir in the cheese and lemon juice after removing from heat
- Finally, you need to divide the stuffing amid artichokes. Put stuffed artichokes in low baking dishes. Cover with aluminum foil.
- Bake for 30 minutes
